Truss was giving a speech to the conference goers about the UK’s food industries and in an enthusiastic way, she pauses as the crowd applauds her previous remarks and again speaks and briefly pausing again, hits the crowd with the now iconic line:
“In December, I’ll be in Beijing, opening up new pork markets!”
Since this conference where she gives the comment without context, the clip must be seen to be fully understood and the pork remark is immediately followed by an ear-to-ear grin, accompanied by a deep stare down the camera lens.
So the reason for the memes, is because of her surprising remark on pork and the slight pause she gave at the conference before the audience begins to applaud.
This now trending meme was first seen in 2015 when Liz Truss gave the conference and it hitted online at that time too.
